Science is the same way, there are well funded (NIH grants) and not so well funded, low budget, duct tape labs. I too have worked in both, and prefer the well funded. I have no doubt that I have learned more from the labs where I have to make every buffer myself, and figure out the chemistry of the odd chemical to see if I can use it as a replacement in the buffer I need right then. But for me, it comes down to time, and my time is better spent on other things, like reading your blog.

Your description of the machine made me think of an old-fashioned "mangle" used in pre-civilization laundry. I'm having trouble reconciling this washing-related violence with croissants. Perhaps I need a bit of a lie-down.

All I have to say is that when I first saw the title of this post, I thought it said, "Duct Tape Kittens," which would have been entirely surprising and interesting (in general, but specifically from you). I understand what you mean about the too well-equipped kitchen, though--it's the same as a server. I can't think of any examples, but I do know that it's much more interesting when there's not a typically adhered-to routine or by-the-book formula that must be followed.

And, not that it matters or is relevant in any way, but I'm rather annoyed that the chunks of Heath Bar in my Heath Bar Crunch ice cream are too big and run too deep to be successfully dug out with a fork so that I may eat them. Grrrr...
