Pineapple Salsa

I love to eat this with a black bean salad, steamed corn tortillas, and lemon-garlic shrimp.
Ingredients:
chopped fresh pineapple 1½ cups
minced red onion ¼ cup
white sugar 2 tablespoons
fresh lemon juice 1 tablespoon
minced fresh cilantro 1 teaspoon
grated fresh ginger 1 teaspoon this is a prefect job for a microplane
fresh mint leaves chiffonade
Procedure:
  1. Combine all and toss.
  2. Let sit out, covered, for at least one hour to marry the flavors.
